“I really appreciate this cookbook! I live full-time in a 34-foot trailer and cooking is a challenge. The recipes are easy to prepare, healthy, and delicious. I especially appreciate that the recipes do not require the use of an oven. This really helps when it’s hot outside and keeping it cool inside is a challenge.” —Anne
“What a great book and resource for planning an RV or camping trip – and even for single people living in a small place or college housing! Full of healthy meals, most made in a single pot or skillet—but also several prepare-ahead items which make on-the-road and last-minute cooking and dining not only healthy but much easier. The coil binding and glossy paper are a thoughtful design for cooking in tight spaces and wiping off spills or fingerprints.” —Tom

“This book is thoughtfully constructed and approachable for cooks of every level. It allows for people to connect more authentically to the growing, harvesting and cooking of their foods. Food truly is the best medicine and these recipes are both tasty and nutritious – an important addition to every gardener’s kitchen.” —Dr. Margaret
“Garden Table Cooking is a wonderful collection of personal recipes developed by the author for transforming your harvest into amazing meals for the whole family. It has real character. The level of sophistication is the next step up in gourmet dining without burdening the cook with a search for hard-to-find ingredients. There seems to be a real love of peppers, which leads to an unusual, but tasty blend of Southwest American and Italian-style cooking. Working through a recipe is really fun because it feels like the author is right with you to help you make it your own. If you could only have one cookbook, this might be the one you need. It is full of love and some divine inspiration.” —Fred
Linda Engel’s cookbooks, Garden to Table Cooking and RV Dining, evolved from her love for gardening, wholesome eating, and traveling with her husband in their small RV.
Growing up in a family where homegrown and homemade food were the norm, both at home and while on family camping trips, gave her a keen appreciation for the joys that gardening and easy, fresh, and colorful homemade meals can bring. Her organic garden abounds with vegetables, herbs, and berries – and the most important ingredients: a grateful heart and lots of love. Her cookbooks artfully blend her love of gardening, cooking, family, and travel.
Her career path took her from being a 1970s hippie to working in international sales in the SCUBA diving industry. After 15 years of traveling the world, she transitioned to a 15-year career as a technical writer. Along the way, she raised three foster girls (not all at the same time!). At the age of 50, she married a wonderful man and was able to retire to focus on homemaking, caring for her family, and nourishing her desire to garden, cook, and travel.
Oh, give thanks to the LORD, for He is good; for His steadfast love endures forever! 1 Chronicles 16:34
